Highland Cattle

Living for centuries in the rugged Highlands of Scotland, these hardy cattle thrived in the harsh conditions.  Natural selection caused only the most fit to live.  This is the oldest breed of registered beef cattle with 1884 being the date of the first herd book.  

Coming to this country with the first pioneers, their docile, even temperament and superior intelligence made the oxen ideal for pulling the prairie schooners, and later plows and log clearing.  
They maintain good body condition on less than ideal pasturage.  They require almost no shelter and are naturally disease resistant.  
Beautiful animals with unusual horns, their thick, long hair coats make the meat very lean as there is no outside layer of fat.  Highland beef is 12-15% lower in cholesterol than regular beef.  
They naturally dress out in pasture at about two years and their beautiful pelts come in many colors.  
Their mothering skills are excellent, and they form strong family units within the herd.
